WORK EXPERIENCE:
-Assisted in construction and operations of an emerging local brewery while gaining first hand entrepreneurial experience working alongside the founders.
-Collaborated with the Master Brewer to meet quality and production goals while enhancing overall efficiency.
-Trained an assistant in adherence to the companies SOPs to ensure production and quality goods.
CELLAR OPERATIONS:
Managed the complete brewing process from grain milling to fermentation and kegging.
-Responsible for operating 5 BBC brewhouse to produce wort to specs.
-Knowledge of modern day dry hopping techniques, traditional lagering, spunding and forced carbonation. Sanitary yeast pitching and harvesting, CIP/SIP of fermenters and brite tanks, Daily monitoring of fermentations, carbon testing and barrel filling procedures. Operate plate and frame filter while testing and managing CO2 and D.O.
-Maintained accurate documentation of brewing process and quality control measures. Prepare, record and log yeast harvesting and pitching. Utilized mechanical and electrical aptitude to troubleshoot and resolve problems.
PACKAGING:
-Operating and CIP of bottling/filling/kegging equipment, sensory evaluation of sample packaging the occasional ferkin.
CELLAR MAINTENANCE:
-Ensured cleanliness and sanitation of brewery equipment and work areas. Performed routine maintenance to minimize downtime and ensure efficiency.
-Upkeep of packaging equipment, pumps, valve replacements, glycol system, compressor and CO2 lines. Responsible for efficiently storing packaged goods. Clean kegs, fermentation tanks, brite tanks, boil kettle, mash turn, ingredients and packaging supplies.
-Help the taproom staff with draft issues, removal of kegs and basic plumbing/cleaning.
